New Orleans is famous for its food, Mardis Gras fueled debauchery and the music. The history of the city is deeply rooted in the African and Caribbean slave trade, which was of course directed by French and English expatriates. In this particular article we will look at the wonderful world of New Orleans Cajun cuisine.

Literally, the phrase Cajun cuisine is derived from the style of food made by those driven out of Acadia (now Eastern Canada). The Acadians were of French origin, and therefore the cuisine they brought to the Louisiana area had a rustic French flair, but adapted to include local ingredients. These people were colonists, pioneers, farmers, people who had to be creative with what they found in the surrounding area; particularly celery, onion and the pepper. Acadians living in Louisiana incorporated African and Caribbean flavors, thanks to the slaves forced to leave their native lands. However there are also elements of Spanish, Portuguese and Italian in Cajun food, making it a truly multicultural style of cuisine.

Smoke meats make up a large part of the Cajun menu, as do barbecued meats. Frying, deep frying and braising are common methods of meat preparation and with lots of spices. Cajun food is most commonly associated with spicy heat, in actuality true Cajun food is full of the flavors of sassafras, thyme, garlic, oregano, bay leaf and cayenne. The heat is only present in a few dishes, others are sweetened with sugar cane. Corn and rice are common partners to any meat dish as well.

A classic Cajun dish is Jambalaya, although most people confuse it with the Spanish dish Paella. Jambalaya is a sort of Stone Soup dish, comprising of any ingredient available at the time. There are few staple elements of the dish always present: rice, celery, onion and peppers. After that, anything goes; poultry, seafood, tomato, okra etc. Another iconic Cajun dish is Gumbo, and once again can incorporate any number of ingredients that happen to be lying around. The distinction between Jambalaya and Gumbo is that Gumbo is more of a soup than a stew, made with a brown roux, always contains okra and is flavored with sassafras.

Cajun food is diverse and flexible in that dishes can be easily altered to incorporate ingredients readily found. It is a cuisine that truly speaks of its roots. The Acadians were exiled from their home in Acadia, so they made do with what was found in Louisiana. African and Native peoples from the Caribbean islands were forced into slavery away from their home land, and kept their cultural dishes alive with what they found in Louisiana. Therefore Cajun food is about adaptation and preservation of a culture.

Visas Jamaica's laws on Visa's are fairly lax. Citizens from the US, Canada, Australia, New Zealand, Mexico, Japan, Israel or any country a member of the European Union are not required to have a visa when entering Jamaica. Visitors are only required to show a return or ongoing airline ticket upon arriving in Jamaica. All other nationalities are required to apply for a visa before entering Jamaica. Nationals from Canada, the UK, Ireland and the US may still in the country for six months before leaving the country. Those from Austria, Belgium, Denmark, Finland, Germany, Iceland, Israel, Luxembourg, Mexico, Norway, Sweden, Switzerland, the Netherlands, Turkey and other Commonwealth Nations are only allowed to stay in Jamaica for three months.

Summer Camp - Coping With Separation Anxiety

Fly A Kite When you think of summer activities, flying a kite is probably somewhere on that list. However, you don't see many kids flying kites anymore. Head down to the local hobby shop to pick up a kite and some string, or you can be adventurous and try to build your own. Once you are out at the park, have a competition with your kids to see who can get the kite up the highest. Just prepare yourself for disappointment, as flying a kite as an adult seems much harder than what I remember as a child.

Go Fishing Grab the fishing poles and a handful of earth worms - although we always used hot dogs for bait when I was a kid - and head down to a nearby pond or river. While it is fun to get out in a boat, you can have just as much fun standing on the shore casting out into the water. It helps to have a tackle box with a few essentials, such as pliers, lures, etc. but don't let the lack of these items prevent you from getting out there. If you plan to fish yourself, be careful as you may require a fishing license for your area and don't want to get fined for breaking the law.

Perform A Random Act Of Kindness. Doing something nice for someone without expecting anything in return will teach your children a very valuable life lesson. It is shocking to see how many people only think about themselves, which is quickly picked up on by children. Take your kids out to pick up trash in the parks. Take them down to the neighbor who has been working late and cut their lawn. Build a birdhouse and take it to a nearby senior center and share it with someone. Get creative about the activity, just be sure to demonstrate to your kids how rewarding it is to do something nice for someone else.

Often parents do not have the time or energy to keep up with their kids so consider a Summer Kids Camp this summer for your child.

Part 2 - Practical Tips for Traveling in Jamaica

In part one of this series we looked at Jamaican currency, the practicalities of spending, and a simple daily living budget when traveling in Jamaica. We also covered the visa laws for those entering Jamaica, including the fact that travelers from Canada, the US, Mexico, Japan, Israel, Australia and New Zealand do not need a visa to enter the country. Now we will continue our discussion on other useful subjects for traveling in Jamaica.

Travel Insurance

No matter where you travel, insurance is always a good idea. No one can predict when an injury or illness will pop up, and one of the worst times is when you are in a foreign country. Before you leave check to see if your regular health insurance covers you when traveling and if not make sure to get some that does. Consider cancellation insurance as well. Injury or illness can occur the day before you are scheduled to fly too, and if your trip needs to be postponed or cancelled it would be a shame to lose your money.

Health

If you take medications regularly make sure to bring them in their original containers and with a doctor's letter describing what they are for and their generic names. If you need to bring syringes, a doctor's letter authorizing their use is also important. If you take vitamins be sure to bring them in their original bottles as well, and before you leave home do some checking to make sure the contents are not a banned substance in Jamaica. Vaccinations are not required before traveling to Jamaica unless you have visited the following regions within the last six weeks: Africa, Asia, Central and South America, the Dominican Republic, Haiti, or Trinidad and Tobago.

If you do decide to be vaccinated, plan your appointment well before the trip as it takes about two weeks for the trip. It is always a good idea to carry a small first aid kit with you when traveling away from home, especially when you are in a foreign country. Put together a little kit for each companion of your party, and make sure it includes things like bandages, antibiotic cream, anti-inflammatory drugs, acetaminophen, sunscreen, bug spray and anything else you think may be helpful.

Safety

When you are in your own country you know what areas of town to avoid and the signs of a potentially unsafe situation. In a foreign country the same indicators may not be present and you will certainly not know which parts of the cities to stay away from. Avoid being a victim start by keeping your hotel windows and doors locked at all times.

If a local asks you if this is your first visit to Jamaica, reply with "no I have been here many times" even if the statement isn't true. This will help you be seen as a seasoned traveler and not easily fooled. It you are asked what resort you are staying at or what part of town, reply vaguely. Say things like "down the street" or "over there". Avoid being specific about your accommodation. Take practical precautions that you would in any foreign place, such as don't walk around at night by yourself (especially if you are female), don't carry a lot of cash, keep valuables and cash in the hotel safe, lock the doors and windows when driving and don't pick up hitchhikers.

A trip to Jamaica can be the experience of a lifetime. Creating memories in such a beautiful and culturally unique place is something very special. Keep the experience positive and enjoyable by being adequately prepared and educated for your trip. Then indulge yourself in the rich cuisine and intense music of Jamaica!

As summer approaches our thoughts turn to leisure time in a relaxing locale. For some, that place is the familiarity of the backyard and a well broken-in lounge chair. For others, summer leisure time is a brand new lounger by the beach with a sea grass umbrella pitched in the sand and a tropical drink in hand.

Hawaii, Brazil and Australia most definitely have some world class beaches, but to go there requires some world class airfare. Consider instead the world renowned beaches in the Caribbean. The Caribbean region is just off the southern coast of the Florida panhandle and includes the Caribbean Sea, 27 territories and countries on over 7000 islands, islets, reefs and cays. The entire region is home to some of the globe's most rare and delicate ecosystems, which means there is an exceptional level of beauty there.

Coral reefs surround many points and islets around the Caribbean Sea, providing a home to hundreds of varieties of tropical fish, mammals and other marine life. On land, the colorful and unique birdlife is comparable to what is found in Central Africa. The mangroves are home to species not found in any other part of the world, snakes, crocs, giant sea otters, manta rays and so many more!

The Caribbean has the most luxurious beachfront resorts found anywhere. Jamaica offers the down to earth culture of the Jamaican people, the spicy sweet cuisine, and the best rum in the world! Cuba has the feel of the 1950's, hot sun and beaches galore! The Dominican Republic offers a tropical vacation venue especially for those on a budget. There are lots of lesser known places to vacation in the Caribbean as well. Antigua and Barbuda is often referred to as a 'twin island nation' when in fact there are 37. Many are uninhabited, and uninhabitable, but so many more are not frequented by the usual stream of tourists. Some islands only have transportation in the form of bicycles or golf carts, so do your research before setting out.

Aruba is another beautiful island in the Caribbean that isn't part of the annual influx of tourists. It is a small 33km long island, a part of the Kingdom of the Netherlands, and most importantly, it lies outside of the Caribbean hurricane belt.

The Caribbean region has something to offer any vacationer, and at a much more affordable price than other areas in the world. It you want warm sandy beaches, the Caribbean has it. If you want culture, the Caribbean has it. If you want marine life, the Caribbean has it. If you want luxury, the Caribbean has it. There is truly something for everyone!

Tips for Going to the Dominican Republic

The Dominican Republic incorporates the western half of the Caribbean island of Hispaniola, while Haiti occupies the eastern and smaller portion of the island. The Dominican Republic is about 18,000 square kilometers, and according to the 2009 census, home to about 10 million people. Like most Caribbean countries, there is a prevalent Spanish flavor to the culture of the country.

Should you decide to visit the Dominican, the first thing that must be done is learn at least a little bit of Spanish. The Dominican Republic is a Spanish speaking country with little English spoken or understood, except in areas popular with tourists. However do not think you can simply stay in those areas and get away with having no Spanish, which will only ensure you don't have much idea of what is going on around you. Knowing at least a little Spanish will mean you can engage in more activities, know what you are eating and where you are going. However, most importantly you will earn the respect of the locals, who will then treat you with much more courtesy and respect.

Learn to like goat. Goat meat is a regular part of Dominican cuisine, as is sugar cane, plantains, black beans and rice. The food is good, a lot like Spanish but with Taino (indigenous peoples) and African twists. There is a clear focus on starches and meats, rather than fruits and vegetables. Do not expect fine French cuisine, even though the French did occupy the island a few times.

The Dominican Republic is a Catholic country, so when you are planning your travel dates try to keep traditional Christian holidays in mind. For example, Holy Week usually falls somewhere between the end of March and the end of April (the dates are different every year), so activities and services may be quite limited during those holidays.

Tip your housekeepers, bellboys, servers, and bartenders. You don't have to give them huge amounts of money, just a little something to show your appreciation for their efforts. The gesture will make a big difference in your service. Even gifts from your home country are appreciated. Treat the hotel or resort staff with respect, not like servants, and they will reciprocate the behavior.

Keep the romantic gestures to a minimum. The Dominican people are friendly, even playful in their behavior. However they are also (for the most part) deeply religious and view intimate act such as kissing or cuddling in public as inappropriate, even distasteful. It may be your honeymoon or romantic getaway, but it is their country and their customs. We would demand the same respect for our own customs in our own country.

Southeast Florida is defined as the strip of land between the Atlantic Ocean, the Everglades and Miami. Also called the Gold Coast, the key cities in the region include Miami, Fort Lauderdale, Pompano Beach, Boca Raton and West Palm Beach. The climate in Southeast Florida is categorized as tropical monsoon, although the mean temperature never falls below 64F. The months spanning from November to March are the most cool and the hot months are from May to October.

The state of Florida is generally known for three things: citrus fruit, world class golf courses and vast beaches. Travelers from all over North America make their way to the Florida coast each year to take in the heat of the summer sun and enjoy the natural elements of the region. Some arrive in their recreation vehicles, choosing to set up house wherever it is permitted and stay for as long as they desire. Others book themselves a few days in a hotel and make a hectic effort to see all the sites before having to leave. Another growing trend emerging over the last few years is actually a throwback to the vacationing habits of wealthy families of the Middle Ages: the vacation rental.

During the time of the infamous King Henry the VIII, his father and his offspring, it was not uncommon for the royal court to go on progress during the summer months. A passport would take care of two of these things, but you may be wondering what a tourist card is? It is a two part document that essentially grants the bearer permission to travel to Mexico. It is free of charge and can be obtained at the airport before take off or at Mexican immigration at your destination. You will need the permission card upon departure, and it is a good idea to write down the number on the card in a safe place in the event of loss or theft.

Once you've cleared customs you'll likely require some transportation if it isn't included in your vacation package or if it has not otherwise been previously arranged. Typical modes of transport are accessible such as trains, buses and rental cars. If you go the rental car route, insurance is mandatory. It can arranged when you're in Mexico but it is generally a better idea to arrange this with your regular state side provider. Bus travel is divided into two classes (first and second) and trains are generally the most expensive option for travel but also offer the most comfort and service.

Unless you have conversational Spanish mastered, it is a good idea to familiarize yourself with some basic phrases in Spanish - "where is...", "what time is it...", "please", "thank you", etc. A pocket sized Spanish to English dictionary is not a bad idea either. US dollars are accepted everywhere but there may be times when the local currency is required. Carry a small amount of Mexican Pesos with you so as not to be caught unaware. Money can be exchanged locally at banks or currency exchange facilities (casas de cambio). Travelers cheques are another option and of course major credit cards are acceptable also.

When it comes to your health, there are some things you can do and bring to help in a preventative manner but the best thing you can do for yourself is to exercise common sense and go with your instincts. Don't go overboard on the drinking of alcohol immediately, try to ease yourself in to your libations and always consume water in equal measure if possible. And when it comes to water, stick to purified or bottled at all times. As for food, any fresh fruit or vegetables should be washed (*with the aforementioned bottled water) and peeled first. As a preventative measure, you may want to take a wide spectrum antibiotic with you (such as ciprofloxacin) or something over the counter such as Imodium or lomotil. It's better to have it and not need it than vice versa.

Plan ahead. Make a list, and check it twice. Due diligence will ensure your holiday in Mexico is one you'll remember for all the right reasons.
